Black Bean Chocolate Cake
1 15oz can black bean, drained and rinsed
5 Tbsp. Melt spread, or melted coconut oil, or melted butter
2 tsp. Vanilla paste or extract
¾ cup sugar
½ cup cocoa powder
1 tsp. Baking powder
1 tsp. Baking soda
1 tsp. Espresso powder
*Pinch Salt if using coconut oil or unsalted butter
- Preheat your oven to 32°F. Grease a 9-inch cake pan and sprinkle it with sifted cocoa powder.
- Blend the eggs, butter or oil, and black beans to a smooth puree in the blender. Completely smooth!
- Add remaining ingredients and keep blending (may need to scrape down blender a few times).
- Bake for 40 minutes.
Light, fluffy, delicious without frosting and terrific while warm.
